Abstract
Water-in-oil high internal phase Pickering emulsions (W/O HIPPEs) exhibit their polyhedral droplets and viscoelastic characteristics, resulting from their high volume fraction of the dispersed phase. These emulsions enable encapsulation of water-soluble substances while minimizing oil content, making them applicable to various applications. While most studies have focused on stabilizing oil-in-water (O/W) HIPPEs using amorphous TiO2 particles, this study provides the first investigation into stabilizing W/O HIPPEs using TiO2 particles of different shapes—spindle-shaped and amorphous—modified with stearic acid. We investigated the role of particle shape in determining the interfacial stability and mechanical properties of W/O HIPPEs through comprehensive analysis of droplet size distribution, interfacial particle behavior, and rheological properties. These findings contribute to the design of HIPPE systems with tunable characteristics, facilitating their application in diverse fields.
